    Through the tail.

    hook it in the tail, crayfish swim backwards so hooking them any other way is un natural and can cost ya a nice fish.

    between the second and third joints in the tail, off to one side with about a size 4 or 6 hook. run the hook right through. in the bottom, out the top. or through the hard nose of them. lightly. you have to drill the hook through the shell. since they are usually swallowed tail first, this puts the hook right where it will do the most good.
